20 Minute Chili Garlic Noodles

Ingredients
4 oz of ramen noodles
1/4 cup of sunflower oil (or oil of your choice)
1/4 cup of reduced sodium soy sauce
1 tbsp of crunchy chili oil
3 cloves of garlic
2 shallots
8 oz of sliced shiitake mushrooms
Scallions for garnish
Directions
1. Bring a large pot of water to a boil and add in ramen noodles. Cook for approximately 5 minutes or until done to your liking. Strain and set aside.
2. Heat a large pan to medium high heat. Mince garlic and dice shallots. Add sunflower oil, soy sauce, crunchy chili oil, garlic and shallots to a pan. Mix well and saute for 2-3 minutes. Add in mushrooms and saute for an additional 5 minutes.
3. Once noodles are done, add to frying pan and mix well. Remove from heat and let cool.
4. When ready to serve, top with sliced scallions and enjoy!
