Vegan Paella with Artichokes
Vegan Paella with Artichokes
Total Time: 30 minutes Prep Time: 10 minutes Cook Time: 20 minutes Servings: 4
Ingredients:
1 cup of uncooked wild rice
2 cups of vegetable broth
3 cloves of garlic
2 shallots
1 cup of sliced mushrooms
28 oz of artichoke hearts
Directions:
1. In a medium saucepan, add rice and broth and bring to a boil. Once boiling, bring down to medium-high heat and cook until liquid has evaporated. Stir occasionally.
2. While rice is cooking, mince garlic and dice shallots. Add to a medium sized frying pan along with artichokes and mushrooms.
3. Heat pan to medium heat and drizzle with a small amount of oil. Saute for 15 minutes or until mushrooms have fully cooked.
4. Combine wild rice and veggies and serve! Alternatively, you can portion into tupperware for meal prep.
