Cinnamon Sugar Pancakes

Ingredients
1 cup of all purpose flour
1/2 cup of brown coconut sugar
1 tsp of cinnamon
1/4 tsp of baking soda
1 cup of unsweetened vanilla almond milk
2 tsps of vegan butter
Optional for garnish:
Vegan butter
Maple Syrup
Directions
1. Add all purpose flour, brown coconut sugar, cinnamon, baking soda and almond milk to a large bowl. Mix well.
2. Heat a small pan to medium heat and add 1/2 tsp of vegan butter. Melt and coat pan evenly.
3. Portion 3 tbsp of batter into pan and cook for approximately 3-5 minutes per side, or until lightly browned and pancake is fully cooked through. Repeat until all batter is used. Batter should yield 4 pancakes.
4. Let cool and top with vegan butter and maple syrup. Serve and enjoy!
