Creamy Avocado Pasta Recipe with Fresh Herbs

Creamy Avocado Pasta Recipe with Fresh Herbs

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
8oz of chickpea pasta
2 cloves of garlic
1 pint of grape tomatoes
1 cup of fresh parsley, loosely packed
3 fresh basil leaves
2 avocados
8oz of vegan feta
1/4 cup of sunflower oil

Directions
1. Bring a large pot of water to a boil and add in chickpea pasta.  Cook for approximately 15 minutes, or until done to your liking.  Strain and set aside.

2. Mince garlic and slice grape tomatoes into fourths.  Add a small amount of oil to a large frying pan and heat to medium heat.  Add in garlic and saute for 3 minutes, or until garlic is lightly browned.

3. Add in grape tomatoes and saute for 10 minutes.  Once pasta is fully cooked, add pasta into a pan and mix well.  Remove from heat and let cool.

4. To make sauce, add parsley, basil, avocados, vegan feta and sunflower oil to a blender.  Blend until smooth.

5. Add sauce to pasta and mix well.  Serve immediately and enjoy!
