Crispy Vegan Roasted Fries

Total Time: 1 Hour and 30 Minutes | Prep Time: 15 Minutes | Cook Time: 1 Hour and 15 Minutes | Servings: 5

Ingredients
5 red potatoes
1 shallot
2 petite peppers
1 tsp of paprika
1 tsp of black pepper
1 tsp of thyme
1 tsp of rosemary

Directions
1. Preheat oven to 350 F.

2. Slice red potatoes into thin wedges and add to a baking sheet. Drizzle with oil and sprinkle with paprika, black pepper, rosemary and thyme. Mix well.

3. Bake for 1 hour and 15 minutes. Flip after 40 minutes.

4. Heat a small pan to medium heat and drizzle with oil.

5. Slice 1 shallot and 2 petite peppers. Add to pan and saute for 10 minutes. Set aside.

6. Remove fries and allow to cool. Top with sauted shallot and peppers.

7. Serve or portion into tupperware.
