Easy Vegan Creamy Borscht

Ingredients
4 small beets
1 cup of unsweetened vanilla almond milk
Optional: diced chives for garnish
Directions
1. Skin and slice beets into small pieces and add to a pot of water. Bring to a boil and cook for 30 minutes.
2. Strain beets and let cool.
3. Add beets and almond milk to a blender and puree until smooth.
4. Pour into a bowl, garnish with chives and enjoy!
