Easy Vegan Quiche

Ingredients
16 oz of tofu
2 shallots
1 cup of baby spinach
1 cup of nutritional yeast
2 tsps of paprika
1 tsp of black pepper
1 tbsp of sunflower oil
Directions
1. Preheat oven to 350F.
2. Press tofu for 10 minutes. Note: To press tofu, wrap tofu blocks in a paper towel and place between two plates. Let sit for 10 minutes.
3. While tofu is pressing, add 2 sliced shallots and baby spinach to a frying pan and saute for 5 minutes on medium high heat, or until shallots are translucent.
4. In a large mixing bowl, mash tofu to create a scrambled like texture. Add in sauteed baby spinach and shallots, nutritional yeast, 1 tsp of paprika, black pepper and sunflower oil. Mix well.
5. Add to a pie dish and sprinkle with paprika.
6. Bake for 30 minutes or until tofu has browned on top.
7. Remove from oven, let cool and enjoy!
