Easy Vegan Strawberry Crepes

Total Time: 45 minutes | Prep Time: 10 minutes | Cook Time: 35 minutes | Servings: 5

Ingredients
1 and 1/2 cups of all purpose flour
1/2 cup of baking stevia
2 pints of strawberries
1 and 1/2 cup of unsweetened vanilla almond milk
1/4 cup of water

Directions
!. Add 1 and 1/2 pints of strawberries and 1/4 cup of water to a saucepan. Bring to a boil and reduce to medium heat. Cook for approximately 30 minutes, or until strawberries have become a thick sauce. Stir frequently.

2. Combine flour, baking stevia and almond milk into a bowl and mix well. Batter should be very runny.

3. Heat a small frying pan to medium heat. Add 3 tbsps of batter to a pan and spread thinly to form crepe. Cook for 2-3 minutes per side. Set cooked crepes aside. Repeat until all batter has been used.

4. Once the strawberry mixture has finished and cooled, add approximately 2 tbsps of mixture to the middle of each crepe and fold over. Repeat until each crepe has been filled.

5. Top crepes with any excess strawberry mixture and garnish with remaining fresh strawberries.
