Fluffy Vegan Pancakes

Ingredients
1/2 cup of almond milk
1 tsp of apple cider vinegar
1 cup of all purpose flour
1/2 cup of sugar
2 tsp of baking powder
1/4 tsp of vanilla extract
3/4 tsp of vegan butter
Optional to taste
Vegan butter
Maple syrup
Directions
1. Add almond milk and apple cider vinegar to a cup. Mix well and refrigerate for 5 minutes.
2. Add flour, sugar and baking powder to a bowl. Mix well. When ready, pour in almond milk and add in vanilla extract. Mix well until batter is smooth.
3. Heat a small frying pan to medium high heat. Add 1/4 tsp of vegan butter to pan and melt. Portion 3 tbsp of batter into pan and cook for approximately 2-3 minutes per side, or until each side is browned and pancakes are fully cooked through. Repeat until all batter is used. Batter should yield approximately 3 pancakes.
4. Optional: once cooled, top with vegan butter and maple syrup to taste.
5. Serve and enjoy!
