Homemade Roasted Tomato Soup & Vegan Grilled Cheese

Ingredients
Tomato Soup
1 pint of grape tomatoes
1 tsp of garlic powder
1 tsp of onion powder
1/4 tsp of sea salt
1/2 cup of fresh basil leaves
1 tbsp of nutritional yeast
1 cup of oat milk
Vegan Grilled Cheese
2 cloves of garlic
1/4 cup of sunflower oil (or oil of your choice)
3 basil leaves
1 tbsp of vegan butter
4 slices of bread
4 oz of vegan mozzarella 

Directions
1. Preheat oven to 400F.

2. Add grape tomatoes to a pan and drizzle with a small amount of oil.  Sprinkle with garlic powder, onion powder, and sea salt.  Mix well and bake for 40 minutes.  Remove from oven and let cool.

3. Peel 2 cloves of garlic and add to a small oven safe dish.  Add in 1/4 cup of sunflower oil.  Cover and bake in oven for 30 minutes.  Remove from oven and let cool.

4. Once cooled, add roasted tomatoes to a blender.  Add in 1/2 cup of basil leaves, nutritional yeast, and oat milk.  Blend until smooth and set aside.

5. Dice 3 basil leaves and add to a small bowl.  Once cooled, add in roasted garlic and oil.  Add in 1/2 tsp of vegan butter.  Mash until smooth.

6. Add butter mixture to 4 slices of bread.  Portion 2 oz of vegan mozzarella between two sandwiches.

7. Heat a medium sized frying pan to medium heat and add 1/4 tsp of vegan butter.  Cook sandwich for approximately 5 minutes, or until golden brown on bottom.  Flip, cover and cook for approximately 2-3 minutes or until bottom is golden brown.  Repeat process for second sandwich.

8. Portion tomato soup between two bowl.  Serve and enjoy!
