Homemade Vegan Sausage

Homemade Vegan Sausage

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 3

Ingredients
1/2 cup of dried lentils (I'm using a blend of green, black and red lentils)
1 tbsp of nutritional yeast
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of fennel seed
1 tbsp of reduced sodium soy sauce
1 tsp of potato starch
1 tbsp of tomato paste
3 rice paper wraps
3 hot dog buns
mustard to taste

Directions
1. Rinse dried lentils and add to a small pot.  Cover with water and boil for approximately 15 minutes, or until all excess water has evaporated.  Set aside and let cool.

2. Once fully cooled, add lentils to a blender along with nutritional yeast, garlic powder, onion powder, fennel seed, soy sauce, potato starch, and tomato paste.  Puree until smooth.

3. Wet a rice paper wrap until it becomes soft and pliable.  Lay flat onto a cutting board and portion 2 tbsp of lentil mixture slightly to the right of the center wrap.  Fold the top and bottom of the wrap towards the center.  Fold the right side of the wrap towards the center and roll the lentil mixture towards the left to create sausage.  Repeat until all lentil mixture is used.  Should yield 3 sausages. 

4. Heat a large frying pan to medium heat and add a small amount of oil to the pan.  Add sausages to pan and lightly toast each side for 5 minutes.  Remove from heat and let cool.

5. When ready to serve, add to a hot dog bun or sausage roll and top with your favorite toppings.  Serve and enjoy!
