No Bake Vegan Cheesecake

Ingredients
4 and 1/2 cups of cashews
8 tbsps of maple syrup
Directions
1. Add 3 cups of cashews to a pot and cover with water. Bring to a boil and reduce to medium high heat. Cook for 20 minutes, strain and let cool.
2. Add 1 and 1/2 cups of cashews and 3 tbsps of maple syrup to a blender. Pulse until cashews are a fine powder.
3. Add cashew powder to the bottom of a cheesecake pan or cake pan. Spread evenly across the bottom to form crust.
4. Freeze for 30 minutes.
5. Once boiled cashews have cooled, add to a blender along with 5 tbsps of maple syrup. Blend until smooth.
6. Remove crust from freezer and pour cashew mixture over crust to form cheesecake. Spread evenly.
7. Refrigerate for 1 hour.
8. Serve and enjoy!
