Salad Stuffed Peppers

Ingredients
4 bell peppers
2 cups of baby spinach
4 tsp of dried cranberries
Optional:
Pecans
Directions
1. Remove tops and seeds of bell peppers.
2. Add 1/2 cup of baby spinach to each pepper.
3. Top with 1 tsp of dried cranberries per pepper.
4. Garnish with pecans as desired.
5. Add your favorite vegan dressing and serve!
