Simple and Tasty Vegan Black Bean Soup Recipe

Ingredients
3 cloves of garlic
1 yellow onion
28oz of canned diced tomatoes
15oz of canned black beans
2 cups of vegetable broth
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of dried parsley
1 tbsp of nutritional yeast
2 limes
Fresh parsley for garnish
Directions
1. Mince garlic and slice yellow onion. Rinse black beans and set aside.
2. Heat a large pot to medium high heat and add in garlic and onion. Saute for 5 minutes.
3. Add in diced tomatoes, half of the black beans, and vegetable broth. Sprinkle in onion powder, garlic powder, parsley, and nutritional yeast. Mix well.
4. Bring to a boil and let simmer for 15 minutes. Remove from heat and let rest for 5 minutes.
5.Using an immersion blender, carefully puree the soup to your desired texture. This recipe purees about half of the soup mixture. Note: If you do not have an immersion blender, you can transfer a portion (or all) of the soup once fully cooled to a blender and puree.
6. Add in the remainder of black beans to soup and let cool.
7. When ready to serve, drizzle each serving with the juice from 1/2 a lime and top with fresh parsley. Serve and enjoy!
