Strawberry Banana Pancakes (Vegan)

Total Time: 50 Minutes | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Servings: 4

Ingredients
1 cup of all purpose flour
1/4 cup of monk fruit
1 tsp of baking soda
1 cup of unsweetened vanilla almond milk
1 banana
1/2 cup of strawberries
1/2 tsp of vegan butter (add more if necessary)
Optional for garnish:
1 banana
1/2 cup of fresh strawberries
1 tbsp of maple syrup

Directions
1. Combine all purpose flour, monk fruit and baking soda into a bowl and mix well.

2. Pour in unsweetened vanilla almond milk and mix well.

3. Slice 1 banana and 1/2 cup of strawberries and add to pancake batter. Fold fruit into batter.

4. Add 1/2 tsp of vegan butter to a small frying pan and bring to medium heat. Add in 3-4 tbps of batter and cook for approximately 3-5 minutes per side, or until each side is golden brown and pancake is fully cooked through. Repeat until all batter is used. Batter yields approximately 4 pancakes. Note: you may need to add more vegan butter to the pan in between pancakes to prevent sticking.

5. Garnish with bananas and strawberries. Drizzle with maple syrup and serve!
