Tofu Avocado Scramble

Ingredients
8 oz of firm tofu
1/2 cup of nutritional yeast
1 tbsp of black pepper
1 tbsp of paprika
1 avocado
4 campari tomatoes
Directions
1. To press tofu, wrap in a paper towel and place between 2 plates. Let sit for 10 minutes.
2. Unwrap tofu and crumble into a mixing bowl. Add nutritional yeast, black pepper and paprika.
3. Heat a medium sized frying pan to medium heat and drizzle with a small amount of oil. Add in tofu and saute for 15 minutes, or until tofu has browned.
4. While tofu is cooking, slice avocado and tomatoes into small wedges, removing avocado skins and pit. Set aside..
5. When tofu is done, portion into a bowl and top with avocado and tomatoes. Enjoy!
