Vegan Apple Pie
Total Time: 1 Hour and 10 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour | Servings: 8
Ingredients
2 cups of whole wheat flour
1 cup of water
8 pink lady apples
Directions
1. Slice each apples into thin wedges, removing core. Add to a large pot and heat to medium heat, allowing apples to reduce for 20 minutes. Note: You can choose to remove the skin from the apples prior to cooking. Personally, I like to leave the skins in. I know, I’m weird.
2. While apples are reducing, mix whole wheat flour and water together. Mix well and let sit for 5 minutes.
3. Preheat oven to 350 F and grease a pie dish.
4. Flour a flat surface and place dough down. Split dough in half and roll out one ball of dough into the shape of your dish. Place dough onto your dish to crease the bottom. Repeat process for the top, but set aside.
5. Add apples to bottom layer of dough. Add top layer, smoothing out to remove any air bubbles. Seal the crust by pressing a fork on the outer layer of the dish. Using a knife, create two slits in the center of the pie to act as air vents.
6. Bake for 40 minutes, or until crust is firm.
7. Remove pie and let cool.
