Vegan Apple Pie Crumble

Ingredients
Filling:
10 granny smith apples
1/2 cup of brown sugar stevia
1 tbsp of cinnamon
Crust:
1 cup of coconut flour
1 and 1/2 cups of water
Crumble:
1 cup of coconut flour
1/2 cup of brown sugar stevia
2 tbsps of vegan butter
Directions
1. Preheat oven to 350 F and grease a pie dish.
2. Skin and slice 10 granny smith apples into small wedges. Put in a large sauce pan and add 1/2 cup of brown sugar stevia and 1 tbsp of cinnamon.
3. Cook granny smith apples on medium high heat for 30 minutes, or until all excess liquid has evaporated from pan.
4. To make crust, add 1 cup of coconut flour to a large bowl. Slowly add in 1 and 1/2 cups of water and mix well to create crust. Add crust to pie dish and evenly spread on the bottom of the dish using hands. Let sit for 10 minutes.
5. To make crumble, melt 2 tbsps of vegan butter. Add to a bowl along with 1 cup of coconut flour and 1/2 cup of brown sugar stevia. Mix well.
6. When apples are done, add to pie dish and top with crumble mixture. Bake for 30 minutes.
7. Remove from oven, let cool and enjoy!
