Vegan Applesauce Pancakes

Ingredients
1 cup of all purpose flour
1/2 cup of brown sugar stevia
1 tsp of baking soda
1 tsp of baking powder
3 granny smith apples
1 tbsp of boiled apple cider
1/2 cup of unsweetened vanilla almond milk
1-4 tsps of vegan butter
Maple syrup to taste
Directions
1. In a bowl, combine all purpose flour, brown sugar stevia, baking soda and baking powder. Mix well.
2. Slice 2 apples into wedges, removing cores. Add to a blender and puree until it becomes smooth. Note: To help blend apples better, add a tbsp of water.
3. Add pureed apples, boiled apple cider and unsweetened vanilla almond milk to dry ingredients. Mix well.
4. Add 1 tsp of vegan butter to a small pan. Heat to medium heat and add 3 tbsps of pancake batter. Cook for approximately 3 minutes per side, or until each side has browned and pancake has fully cooked through. Repeat until all batter is used. Pancake batter should yield 4 pancakes. Note: Add vegan butter to pan as necessary to prevent sticking.
5. Drizzle with maple syrup and garnish with slices from 1 granny smith apple.
6. Serve and enjoy!
