Vegan Banana Pancakes

Ingredients
1 ripe banana
1 cup of all purpose flour
1/4 cup of stevia
1 tsp of baking soda
1/2 tsp of vanilla extract
1 cup of almond milk
1 and 1/4 tsp of vegan butter
Optional for topping:
Vegan butter
Maple syrup
Directions
1. Add 1 banana to a large bowl and mash until smooth. Add in all purpose flour, stevia, baking soda, vanilla extract, and almond milk. Mix well.
2. Heat a small frying pan to medium heat and melt 1/4 tsp of vegan butter in pan.
3. Portion in 3 tbsps of pancake batter into pan. Cook for approximately 3-4 minutes per side, or until each side has browned and pancake is fully cooked through. Repeat until all batter is used. Batter should yield 5 pancakes.
4. Let cool, serve and enjoy!
