Vegan BBQ "Chicken" Nachos

Vegan BBQ "Chicken" Nachos

Total Time: 35 Minutes | Prep Time: 10 Minutes | Cook Time: 25 Minutes | Servings: 8

Ingredients
1 head of cauliflower
14oz of canned jackfruit
1/2 cup of vegan bbq sauce
1 cup of grape tomatoes
2 tbsp of diced red onion
1/4 cup of cilantro, loosely packed
1 lime
2 cups of shredded vegan cheese
2 chipotle peppers in adobo sauce
1 tsp of onion powder
1 tsp of garlic power
1 cup of almond milk
5 oz of tortilla chips

Directions
1. Rinse cauliflower and cut into small florets, removing leaves.  Add to a steamer and cook for approximately 10 minutes, or until cauliflower is tender.  Remove from heat and let cool.

2. Add 1 can of jackfruit to a bowl and break apart to create a shredded texture.  Add vegan bbq sauce to jackfruit and mix well.

3. Heat a small frying pan on medium high heat and add in jackfruit.  Saute for 15 minutes, or until jackfruit has slightly browned.  Remove from heat and let cool.

4. Slice tomatoes and dice red onion and cilantro.  Add to a small bowl and drizzle in the juice of 1 lime.  Mix well and set aside.

5. Once cauliflower has fully cooled, add to a blender along with vegan cheese, chipotle peppers, onion powder, garlic powder, and almond milk.  Blend until smooth.

6. Layer half of the tortilla chips in a dish and top with half of the jackfruit, veggies and cheese.  Repeat the layer of tortilla chips, jackfruit, veggies and cheese a second time. 

7. Serve and enjoy!
