Vegan Beef Stew with Jackfruit

Total Time: 6 hours and 10 Minutes | Prep Time: 10 Minutes | Cook Time: 6 Hours | Servings: 4

Ingredients
4 cups of vegetable broth
15 oz of canned jackfruit
6 red potatoes
2 stalks of celery
2 carrots
2 sprigs of rosemary
4 sprigs of thyme
1 tbsp of black pepper
2 tbsps of reduced sodium soy sauce

Directions
1. Slice red potatoes, celery and carrots.

2. Combine vegetable broth, jackfruit, red potatoes, celery, carrots, rosemary, thyme and black pepper into a slow cooker and mix well. Add in 2 tbsps of reduced sodium soy sauce.

3. Cover and let cook for 6 hours, stirring occasionally.

4. Serve and enjoy!
