Vegan BLT with Smokey Maple Bacon
Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 2
Ingredients
1 tbsps of reduced sodium soy sauce
1/2 tsp of liquid smoke
1 tbsp of maple syrup
1 large carrot
4 slices of vegan whole wheat bread
2 tbsps of vegan mayo
4 leaves of lettuce
4 slices of tomato
Directions
1. Add soy sauce, liquid smoke and maple syrup to a large shallow bowl. Mix well.
2. Slice 1 large carrot into thin strips. Add to bowl and mix well. Let sit for 5 minutes.
3. Heat a large frying pan to medium heat and drizzle with a small amount of oil. Add slices of carrot bacon to pan and fry for approximately 5 minutes per side, or until bacon has browned on each side.
4. To make one sandwich, add 1 tbsp of vegan mayo to one slice of bread. Top with 2 leaves of lettuce, 2 slices of tomato and carrot bacon.
5. Serve and enjoy!
