Vegan Bolognese with Lentils
Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 4
Ingredients
28 oz of diced tomatoes
28 oz of tomato puree
3 cloves of garlic
3 shallots
1 bell pepper
1 tsp of onion powder
1 tsp of paprika
1/2 tsp of oregano
1/2 cup of dried lentils
8 oz of chickpea pasta
Directions
1. Slice shallots and pepper. Mince garlic.
2. Add diced tomatoes, tomato puree, garlic, shallots, bell pepper, onion powder, paprika, oregano and rinsed dried lentils to a pot. Mix well.
3. Cove pot and bring to a boil. Reduce to medium high heat and cook for approximately 20 minutes. Stir occasionally.
4. While sauce is cooking, bring a large pot of water to a boil. Add in chickpea pasta and cook for approximately 15 minutes, or until done to your liking. Strain and set aside.
5. When sauce is done, combine with pasta and mix well. Let cool.
6. Serve and enjoy!
