Vegan Buckwheat Pancakes

Ingredients
3/4 cup of buckwheat flour
1/2 cup of stevia
1 tsp of baking soda
1 cup of unsweetened vanilla almond milk
Optional:
2-3 tsps of vegan butter
Directions
1. In a bowl, combine buckwheat flour, stevia, baking soda, and almond milk. Mix well.
2. Heat a small pan and add 1/2 tsp of vegan butter to coat pan.
3. Add in 3 tbsps of batter and cook for approximately 5 minutes per side, or until each side is browned and pancake is fully cooked through. Repeat until all batter is used. Batter should yield 4 pancakes.
4. Serve and enjoy!
