Vegan Burrito Bowl

Ingredients
1/2 cup of uncooked wild rice
1/2 cup of dry kidney beans
2 cloves of garlic
2 shallots
3 petite bell peppers
1 tsp of brown sugar stevia
2 tsps of adobo sauce
1 tsp of paprika
1 cup of tomatoes
2 avocados
Directions
1. Add wild rice to a pot of water and bring to a boil. Cook for approximately 20 minutes, or until no excess water remains.
2. Strain and rinse kidney beans. Add to a pot of water and bring to a boil. Boil for approximately 10 minutes, and let sit for 15 minutes. Strain and set aside.
3. Slice shallots and peppers, and mince garlic. Add to a frying pan and saute for 10 minutes on medium heat, or until shallots and peppers have begun to brown.
4. Add in brown sugar stevia, adobo sauce, paprika, and cooked wild rice. Mix well and let set for 5 minutes. Note: If you want to make a milder version, you can replace adobo with tomato paste.
5. Portion rice into a bowl and add 1/4 cup of sliced tomatoes, approximately 1/4 cup of kidney beans, and 1/2 an avocado (sliced) to each bowl.
6. Serve and enjoy!
