Vegan Burrito Recipe

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
1/4 cup of wild rice
2 cloves of garlic
2 shallots
3 petite bell peppers
Sunflower oil
15 oz of canned black beans
1/4 cup of tomato puree
1 tbsp of adobo sauce
1 tsp of paprika
1 tbps of black pepper
1 cup of vegan cheese
4 whole wheat tortillas
2 avocados

Directions
1. Add wild rice to a sauce pan and cover with water. Bring to a boil and reduce to medium high heat. Cook for approximately 15 minutes, or until all excess water has evaporated.

2. Mince garlic and slice shallots and peppers. Add to a large frying pan and drizzle with sunflower oil.

3. Saute on medium high heat for 10 minutes.

4. Once ready, add cooked wild rice to veggies. Add in black beans, tomato puree, paprika and black pepper. Mix well.

5. Sprinkle with 1 cup of vegan cheese and cook for an additional 5 minutes. Remove from heat and let cool.

6. When ready to serve, mash avocados and add to tortillas. Top with burrito mixture. Serve and enjoy!
