Vegan Carrot Cake

Ingredients
2 cups of all purpose flour
1/2 cup of stevia
1 cup of finely shredded carrots
1 tsp of baking soda
1 tsp of baking powder
1 tsp of cinnamon
1/2 tsp of vanilla extract
2 cups of almond milk
Cream Cheese Frosting
1 and 1/2 cups of vegan cream cheese
1 tbsp of maple syrup
1 tsp of lemon juice
1/2 tsp of vanilla extract
Directions
1. Preheat oven to 350 F.
2. In a large bowl, combine all purpose flour, stevia, shredded carrots, baking soda, baking powder, cinnamon, vanilla extract, and almond milk. Mix well.
3. Add batter to a square baking dish. Bake for 30 minutes, or until carrot cake is fully cooked through.
4. While carrot cake is baking, combine cream cheese, maple syrup, lemon juice and vanilla extract. Using a mixer, whip until smooth and creamy, approximately 2-3 minutes.
5. Remove carrot cake from oven and let cool completely. Once cooled, frost carrot cake. Note: You want to make sure that carrot cake is completely cool when you add the frosting. If the cake is still warm, it may cause the frosting to melt.
6. Serve and enjoy!
