Cauliflower Leek Soup

Ingredients
2 leeks
1 medium head of cauliflower
2 red potatoes
1 tsp of garlic powder
1 tsp of onion powder
2 tsps of paprika
1/4 tsp of turmeric
Sunflower oil
2 cups of vegetable broth
1 tsp of parsley
1 tbsp of nutritional yeast
1 tbsp of reduced sodium soy sauce
Directions
1. Preheat oven to 400F.
2. Skin and thinly slice potatoes. Thinly slice leeks.
3. Add leeks, cauliflower, and potatoes to a parchment paper lined baking sheet. Drizzle with sunflower oil and sprinkle in garlic powder, onion powder, paprika, and turmeric. Mix well.
4. Bake for 40 minutes, or until potatoes and cauliflower have completely soft. Toss after 20 minutes.
5. Once cooled, add half of veggie mixture to a blender. Pour in vegetable broth and add in parsley, nutritional yeast, and soy sauce. Blend until smooth.
6. Pour mixture into bowls and add in remainder of veggie mixture into each bowl.
7. Serve and enjoy!
