Vegan Chickpea Cutlets

Ingredients
2 cups of cooked, dried chickpeas
1 tbsp of cornstarch
1 tsp of xanthan gum
1/3 cup of nutritional yeast
1/4 cup of reduced sodium soy sauce
Directions
1. Add chickpeas, cornstarch, xanthan gum, nutritional yeast, and reduced sodium soy sauce to a blender and puree until smooth.
2. Heat a large frying pan to medium heat.
3. Form 4 patties out of chickpea mixture and add to pan. Cook for approximately 5 minutes per side, or until each side is golden brown.
4. Serve and enjoy!
