Vegan Chickpea Orzo Soup

Ingredients
3 cloves of garlic
1 yellow onion
2 small carrots
3 stalks of celery
1 cup of orzo
6 cups of vegetable broth
2 tsp of garlic powder
2 tsp of onion powder
1 tsp of red pepper flakes
1 tsp of paprika
1 cup of canned or cooked chickpeas
Optional for garnish:
Fresh parsley
Fresh Basil
Directions
1. Mince garlic and slice onion, carrots and celery.
2. Heat a large pot to medium high heat and add in garlic and onion. Saute for 2-3 minutes.
3. Add in carrots and saute for 5 minutes. Add in celery and rinsed orzo and saute for an additional 2 minutes.
4. Add in vegetable broth and sprinkle in garlic powder, onion powder, red pepper flakes and paprika. Mix well and bring to a boil. Let simmer for 15 minutes. Add in chickpeas and let cool.
5. When ready to serve, portion out soup and top with fresh parsley and basil. Serve and enjoy!
