Vegan Chickpea Sandwich

Ingredients
15 oz of canned chickpeas
1 tbsp of sesame seeds
1/4 cup of cornstarch
2 tbsps of reduced sodium soy sauce
2 whole wheat hamburger buns
2 slices of vegan cheese
2 tsp of sliced scallions
1 tsp of vegan mayo
Optional: sriracha to taste
Directions
1. In a blender, combine canned chickpeas, sesame seeds, cornstarch and soy sauce. Puree until smooth.
2. Heat a medium sized frying pan to medium heat. Form 2 patties from chickpeas and add to pan. Cook for approximately 5 minutes per side or until each side is golden brown.
3. Add chickpea patties to a whole wheat hamburger bun with vegan cheese. Garnish each sandwich with 1 tsp of sliced scallions. Add 1/2 tsp of vegan mayo to each bun and drizzle with sriracha to taste.
4. Serve and enjoy!
