Vegan Chipotle Chickpea Sandwiches

Ingredients
1 cup of cooked chickpeas
1 tbsp of cornstarch
1 tsp of vital wheat gluten
2 tbsps of soy sauce
2 tbsps of adobo sauce
2 slices of vegan cheddar cheese
1 avocado
2 whole wheat buns
Optional: sriracha to taste
Directions
1. Combine chickpeas, cornstarch, vital wheat gluten, soy sauce and adobo sauce in a blender and puree until mostly smooth. Let sit for 10 minutes.
2. Heat a medium sized frying pan to medium heat and drizzle a small amount of oil. Form 2 patties, add to frying pan and cook for approximately 5 minutes per side, or until each side has browned and cooked through.
3. Add each patty to a whole wheat bun, top with vegan cheese, sliced avocado and drizzle with extra sriracha for a little more heat.
