Vegan Chocolate Coconut Cupcakes

Total Time: 40 Minutes | Prep Time: 15 Minutes | Cook Time: 25 Minutes | Servings: 6

Ingredients
1 cup of coconut flour
1 cup of vegan cocoa powder
1/2 cup of monk fruit sweetener
1 tbsp of baking powder
1 tsp of baking soda
1 cup of unsweetened vanilla almond milk
6 tbsps of vegan chocolate chips
Optional:
1 can of vegan chocolate frosting
3 tbsps of shredded coconut

Directions
!. Preheat oven to 350F and grease a muffin tin.

2. Combine coconut flour, vegan cocoa powder, monk fruit sweetener, baking powder, baking soda and unsweetened vanilla almond milk in a bowl and mix well.

3. Portion 2 tbsps of mixture into a muffin cup. Repeat until 6 muffin cups of have filled.

4. Add 1 tbsp of vegan chocolate chips to each cup.

5. Spoon an additional tbsp of mixture on top of chocolate chips and pat down to seal.

6. Bake for 25 minutes.

7. Remove from oven and let cool.

8. Optional: frost each cupcake with the desired amount of frosting and garnish with shredded coconut.
