Vegan Chorizo Hash

Ingredients
16 oz of red potatoes
8 oz of tempeh
2 cloves of garlic
3 shallots
2 petite peppers
2 oz of black olives
1 tbsp of sriracha
2 tbsps of reduced sodium soy sauce
1/4 cup of nutritional yeast
Directions
1. Preheat oven to 350F.
2. Slice and add potatoes to a baking tray or pan. Drizzle with a small amount of oil and mix well.
3. Bake for 1 hour.
4. Slice shallots, peppers, black olives and mince garlic. Crumble tempeh.
5. Heat a frying pan to medium heat and add a small amount of oil. Add in shallots, peppers, black olives, minced garlic and tempeh. Add in sriracha, soy sauce and nutritional yeast. Mix well and saute for 20 minutes. Set aside and keep warm.
6. When potatoes have cooled, add into tempeh mixture and mix well.
7. Serve immediately or portion into tupperware for meal prep.
