Vegan Coconut Flour Pancakes

Total Time: 50 Minutes | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Servings: 4

Ingredients
1 cup of coconut flour
1/2 cup of baking stevia
1/4 tsp of baking soda
1/2 tsp of xanthan gum
1 tbsp of maple syrup
2 cups of unsweetened vanilla almond milk
1/3 cup of cornstarch
2 tsps of vegan butter

Directions
1. In a bowl, combine coconut flour, baking stevia, baking soda, xanthan gum, maple syrup, and almond milk. Mix well.

2. Add in cornstarch and mix well.

3. Heat a small frying pan to medium heat and melt 1/2 tsp of vegan butter.

4. Portion in 2 tbsps of batter and let cook for approximately 5 minutes per side or until each side has browned and pancakes are cooked through. Repeat until all batter is used.

5. Serve and enjoy!
