Vegan Coconut Lemon Muffins

Ingredients
1/2 cup of coconut flour
1/2 cup of oat flour
1/4 cup of stevia
1/2 tsp of baking soda
1 lemon
1 cup of unsweetened vanilla almond milk
Directions
1. Preheat oven to 350F.
2. In a bowl, combine coconut flour, oat flour, stevia, baking soda, zest of 1 lemon, and almond milk. Mix well.
3. Portion 1-2 tbsp of batter into each muffin tin. Batter should yield 6 muffins.
4. Bake for 25 minutes or until muffins have browned.
5. Remove from oven, let cool and enjoy!
