Vegan Farro with Maple Brussels Sprouts

Ingredients
1 cup of raw farro
4 cups of vegetable broth
16 oz of Brussels sprouts
2 tbsps of dried cranberries
3 tbsps of maple syrup
Directions
1, Rinse and strain farro and add to a pot with vegetable broth. Bring to a boil and reduce to medium high heat. Cook until all excess liquid has evaporated, stirring occassionally
2. Slice Brussels sprouts in half and add to a large frying pan. Drizzle with a small amount of oil and saute on medium high heat for 20 minutes, or until completely softened.
3. Combine farro and Brussels sprouts. Add in dried cranberries and maple syrup. Mix well.
4. Serve immediately or portion into tupperware for meal prep.
