Vegan Greek Orzo Salad

Ingredients
1/2 cup of dry orzo
1 tbsp of diced red onion
3 on the vine tomatoes
2 stalks of celery
1 tbsp of black pepper
1 tbsp of sunflower oil
1 tbsp of diced fresh mint
Directions
1. Rinse orzo and add to a medium sized pan. Cover with water and bring to a boil. Cook for approximately 20 minutes, or until orzo has become soft and puffy. Strain and let cool.
2. While orzo is cooking, dice red onion, tomatoes, celery and mint. Set aside.
3. Once orzo has cooled, add to a bowl. Add in red onion, tomatoes, celery, mint, black pepper and sunflower oil. Mix well.
4. Serve and enjoy or portion into tupperware for meal prep.
