Vegan Jackfruit Burrito Bowl

Ingredients
1 cup of wild rice
2 cups of vegetable stock
15 oz of canned black beans
2 tbsps of chipotle adobo sauce
14 oz of canned jackfruit
1/2 tsp of liquid smoke
2 tsps of reduced sodium soy sauce
Sunflower oil
4 on the vine tomatoes
Directions
1. In a medium sized sauce pan, add 1 cup of wild rice and 2 cups of vegetable stock. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess liquid has evaporated.
2. In a small frying pan, add 15 oz of rinsed, canned black beans. Add 2 tbsps of chipotle adobo sauce. Cook on medium heat for 10 minutes. While cooking, mash beans as they soften to create a refried bean texture. Note: To make a milder version of this dish, add chipotle adobo sauce to taste.
3. In a small frying pan, add jackfruit, liquid smoke and reduced sodium soy sauce. Drizzle with sunflower oil and saute on medium heat for 10 minutes, or until jackfruit has browned.
4. Dice 4 on the vine tomatoes, and set aside.
5. To build burrito bowl, start with a base of wild rice. Top with jackfruit, black beans and 1 diced on the vine tomato. Serve and enjoy, or portion into tupperware for meal prep.
