Vegan Lemon Blueberry Cheesecake Bites
Total Time: 40 Minutes | Prep Time: 10 Minutes | Passive Time: 30 Minutes | Servings: 12
Ingredients
1 cup of boiled cashews
1 cup of fresh blueberries
1 cup of unsweetened vanilla almond milk
1 tbsp of maple syrup
12 blueberries for garnish
1 lemon
Directions
1. Combine cashews, 1 cup of fresh blueberries, unsweetened vanilla almond milk and maple syrup to a blender and puree until smooth.
2. Portion mixture into a greased mini muffin tin.
3. Freeze for 30 minutes.
4. Remove from freezer and gently remove cheesecake bites using a spoon. Add to a serving plate.
5. Add blueberries and lemon zest to cheesecake bites and serve!
