Vegan Lemon Blueberry Coffee Cake

Ingredients
2 cups of almond flour
1 cup of monk fruit sweetener
1 tbsp of baking powder
1 cup of unsweetened vanilla almond milk
1 cup of blueberries
1 lemon
Directions
1. Preheat oven to 350F and grease a cake dish.
2. Combine almond flour, monk fruit sweetener, baking powder and almond milk into a mixing bowl and stir well.
3. Mix in fresh blueberries and the zest of 1 lemon.
4. Add mixture to cash dish and bake for 30 minutes, or until coffee cake has browned and cooked through.
5. Let cool and serve.
