Vegan Lemon Blueberry Pancakes

Ingredients
1/2 cup of all purpose flour
1/4 cup of stevia
1/4 tsp of baking soda
1 lemon
1/2 cup of unsweetened vanilla almond milk
1/2 cup of blueberries
1 tsp of vegan butter
Maple syrup to taste
Directions
1. In a bowl, combine all purpose flour, stevia, baking soda, zest of 1 lemon and almond milk. Mix well.
2. Add blueberries to bowl and fold into batter.
3. Heat a small frying pan to medium heat and melt 1/3 tsp of vegan butter. Portion in 3 tbsps of pancake batter.
4. Cook each pancake approximately 5 minutes per side, or until each side is golden brown and pancake is fully cooked through. Repeat until all batter is used. Batter should yield 3 pancakes.
5. Once cooled, drizzle pancakes with maple syrup to taste. Serve and enjoy!
