Vegan Lemon Poppy Seed Muffins

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 6

Ingredients
1 and 1/2 cups of all purpose flour
1/2 cup of stevia
1 tsp of baking soda
1 tsp of baking powder
1 lemon
2 tsps of poppy seeds
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350F.

2. Add all purpose flour, stevia, baking soda, baking powder, zest of 1 lemon, poppy seeds and almond milk into a bowl and mix well.

3. Line a greased muffin tin with cups and add in 1-2 tbsps of batter into each cup. Batter should yield 6 muffins.

4. Bake for 30 minutes, or until muffins have lightly browned and are fully cooked through.

5. Remove from oven, let cool and enjoy!
