Vegan Lemon Poppy Seed Pancakes

Ingredients
1 cup of all purpose flour
1/2 cup of baking stevia
1 tbsp of baking powder
Zest of 1 lemon
1 tbsp of poppy seeds
1/2 cup of unsweetened vanilla almond milk
Directions
1. Combine all ingredients in a bowl and mix well.
2. Heat a small frying pan to medium high heat. Portion 4 tbsps of mixture into pan and cook for approximately 2-3 minutes per side, or until each side is browned. Repeat until all batter is used. Batter should yield 4 pancakes.
3. Serve and enjoy!
