Vegan Lentil Tajine

Ingredients
1/2 cup of raw lentils
1 cup of uncooked rice
3 shallots
3 petite bell peppers
3 cloves of garlic
2 celery stalks
4 cups of vegetable broth
2 tbsps of cornstarch
5 tbsps of reduced sodium soy sauce
2 tbsps of fresh rosemary
1 tbsp of fresh thyme
Directions
1. Strain lentils and add to a small pot. Cover with water and bring to a boil. Reduce to medium-high heat and cook for approximately 20 minutes, or until all excess liquid has evaporated. Strain and set aside.
2. While lentils are cooking, add rice to a pot and cover with water. Bring to a boil and then reduce to medium-high heat. Cook for approximately 20 minutes or until no excess water remains. Set aside.
3. Slice shallots, peppers, celery and mince garlic. Add to a large frying pan and drizzle with a small amount of oil. Saute on medium heat for 5 minutes.
4. Add vegetable broth, cornstarch, soy sauce, rosemary and thyme to frying pan and stir. Cook on medium high heat for approximately 15 minutes.
5. Once 1/4 of the liquid remain, add rice and lentils to the dish and mix well. Cook for an additional 5 minutes.
6. Serve immediately or portion into tupperware for meal prep.
