Vegan Mexican Buddha Bowl

Ingredients
1 and 1/2 cups of wild rice
4 cups of water
1 tbsp of chili powder
1 tbsp of paprika
1 tsp of black pepper
1 cup of dried black beans
2 cloves of garlic
3 shallots
2 jalapenos
2 and 1/2 cups of cherry tomatoes
5 limes
Directions
1. In a medium sized saucepan, add wild rice. Cover with 4 cups of water and sprinkle in chili powder, paprika and black pepper. Boil for 20 minutes, or until all excess water has evaporated.
2. Rinse black beans and add to a small sauce pan. Cover with water and boil for 20 minutes, or until beans have become tender.
3. Slice shallots, jalapenos and tomatoes. Set tomatoes aside. Mince garlic. Add shallots, jalapenos, and garlic to a medium sized frying pan and saute on medium heat for 15 minutes, or until jalapenos have softened.
4. To assemble a bowl, start with approximately 1 cup of rice and top with black beans, veggies, 1/2 cup of tomatoes. Drizzle each bowl with juice from 1 lime.
5. Serve and enjoy, or portion into tupperware for meal prep!
