Vegan Mushroom Lentil Meatballs

Vegan Mushroom Lentil Meatballs

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 3

Ingredients
1/2 cup of dried lentils
1 cup of sliced baby bella mushrooms
2 tbsp of nutritional yeast
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of dried basil
2 tbsp of soy sauce
1/4 cup of flax seed meal
1/4 cup of panko

Directions
1. Strain and rinse lentils.  Add to a pot and cover with water.  Bring to a boil and let cook for approximately 15 minute, or until all excess water has evaporated.  Let cool fully.  Note: You can use any lentils you prefer.  For this recipe, I'm using a blend of green, red and black lentils. 

2. Preheat oven to 350F.  Line a baking sheet with parchment paper and set aside.

3. Once cooled, add lentils along with 1 cup of sliced mushrooms, nutritional yeast, onion powder, garlic powder, basil and soy sauce.  Blend until smooth.

4. Add lentil mixture to a bowl and add in flax seed meal and panko.  Mix well.

5. Portion 1 tbsp of lentil mixture into your hand and roll gently to form a ball.  Repeat until all lentil mixture is used.  Mixture should yield approximately 10 meatballs. 

6. Add lentil meatballs to baking sheet and bake for 20 minutes.  Remove from oven and let cool.

7. Add to your favorite recipes and enjoy!
