Vegan Neapolitan Parfait

Ingredients
3 cups of soaked cashews (see notes)
1/3 cup of unsweetened vanilla almond milk
1/3 cup of chocolate almond milk
!/2 cup of fresh strawberries
Directions
1. To make vanilla layer, add 1 cup of soaked cashews and unsweetened vanilla almond milk to a blender and puree until smooth.
2. To make chocolate layer, add 1 cup of soaked cashews and chocolate almond milk to a blender and puree until smooth.
3. To make strawberry layer, add 1 cup of soaked cashews and fresh strawberries to a blender and puree until smooth.
4. In a small glass, layer chocolate, vanilla and strawberries. Optional: garnish with a fresh strawberry.
Note on cashews: To softened cashews, you can either boil them for approximately 15 minutes and let cool, or if you’re doing a raw vegan diet, you can cold soak and refrigerate them overnight.
