Vegan Omelette Chickpea Flour

Ingredients
1 cup of chickpea flour
1 tbsp of cornstarch
1 tbsp of nutritional yeast
1 tbsp of paprika
1 tsp of black pepper
1 cup of unsweetened vanilla almond milk
1/2 cup of vegan shredded mozzarella
Optional:
1/2 tsp of vegan butter
Directions
1. Combine chickpea flour, cornstarch, nutritional yeast, paprika and black pepper in a bowl and mix dry ingredients.
2. Pour in 1 cup of almond milk and mix well.
3. Heat a small frying pan to medium heat and melt a 1/4 tsp of vegan butter in the pan.
4. Portion in 3-4 tbps of batter and spread evenly in pan to create a circle. Cook for approximately 5 and flip.
5. Top 1 side of omelette with 1/4 cup of vegan cheese and cook for 3 minutes. Fold in half.
6. Repeat process until all batter is used. Batter should yield 2 omelettes.
7. Top with your favorite sauce, and serve and enjoy!
